Summer’s well and truly here and the Kenmare Bay Hotel & Resort, together with its neighbouring town of Kenmare, has plenty on offer to keep you amused.

The Hotel has some great family packages for the summer. One is in conjunction with Star Outdoors – an outdoor adventure centre just 5 minutes from the Hotel. For the months of July & August, you can bring the family for 2 nights’ B&B plus 1 dinner and a choice of activity, for the all-inclusive price of €324. The activities on offer are; (a) Family Cruise – wildlife cruise around Kenmare Bay – 1 & ½ hours. Outstanding scenery, see the grey seals, herons, gannet and other wildlife; on-board commentary (b) 1 hour kayaking hire session; wet suits and buoyancy aids included, use of water trampoline and slide included or (c) 1 hour archery session; equipment hire included, supervised by an instructor. The package is for 2 adults and 2 children (under 16) sharing. That’s a total price of just €324 for 2 nights’ B&B, 1 dinner and 1 activity! So get the family together, decide on your activity and then contact the hotel to book. It couldn’t be easier.

Another great package for the family is our family break for 2 nights’ b&b plus 1 dinner and kids club on one of the evenings. This is just €299 for july and august and is for 2 adults and 2 children sharing. Our kids club is for children aged 5 – 12 and is run and managed by qualified child minders. Activities include circle time, arts & crafts, indoor/outdoor games, board games & dvds, snack time juice, fruit, bar, & crisps. Contact us for more details or to book.

However, if you’re a golfer and you’re looking to get away from the family for a couple of days – we have the package for you! Our peninsula golf pass package includes 2 nights’ b&b, 1 dinner and the golf pass. The pass entitles you to a round at dooks links course, skellig bay golf club and ring of kerry golf & country club. Each course is unique in its own right and is set amidst the most stunning scenery. Our package is just €284 per person sharing for july & august.

If that all sounds a bit too energetic for you, then simply relax in the comfortable environment of the kenmare bay hotel & resort; make the most of our leisure centre with its fabulous swimming pool, children’s pool, sauna, jacuzzi, steam room and gym and book yourself a spa treatment with renew beauty. Then, in the evening, take a stroll into kenmare town (just 3 minutes from the hotel via a pathway) browse its varied and quirky shops, relax in one of the many cafes or bars or dine at one of the award-winning restaurants. Alternatively, take in some entertainment at kenmare’s very own little theatre – the carnegie arts centre – which is offering a varied programme of plays, music and film throughout the summer as well as hosting an exhibition of local artistes’ work.

Baked Salmon with Herbs & Caramelised Lemon

Baked Salmon with Herbs & Caramelised Lemon Slices

 

4 Fillets of Salmon

3 small lemons, thickly sliced

50ml olive oil

4-6 fresh bay leaves

few sprigs each fresh rosemary , thyme, basil, sage and parsley

2-3 lemon grass stalks, cut into large pieces

1 head garlic , halved horizontally

1 tsp peppercorns , mixed or black

 

Rub the Salmon Fillets with olive oil, salt and pepper. Lay three large pieces of foil over a large baking tray, overlapping the long edges.

Heat oven to 200 C

 

Heat a little oil in a non-stick frying pan, then fry lemon slices over a high heat for 2-3 mins until golden. Season; allow to cool slightly.

Scatter a handful of herbs and lemongrass over foil, then place the salmon on top. Tuck caramelised lemon, herbs and garlic around and inside fish, splash over a little oil and scatter over salt, peppercorns.

Fold the foil around the fish to make a shallow tent. Cook in the centre of the oven for 15-20 mins, depending on the thickness of the salmon. Remove from the oven and rest the fish for at least 10 min, still wrapped in foil.

 

Drain the juices into a small jug.

Serve with caramelised lemons and a drizzle of the juices.
